Travel + Leisure India and South Asia We held our first masterclass of the year at Andaz Delhi. The culinary masterclass was led by Chef Matteo Fracarossi, Executive Chef of Andaz Deli. The chef’s passion for cooking was ignited in Italy in his 1988 and has since taken him to locations around the world, including Chef Antonino Canna Vacciuolo’s Villa Crespi, which earned him two Michelin stars during his tenure. ‘La Dolce Vita’ started with a bang with welcome drinks and canapés including destructured bruschetta featuring tomato mousse, mini bread croutons and oregano oil. shutbuckwheat fritters stuffed with soft and flavorful Valtellina cheese.
“After a long journey around the world, I came to India for the first time. When most people think of Italian food, they think of pizza and pasta. I believe there is much more to Italian food. [according to me] The most unique Italian dish is risotto. The Italian way of cooking rice is very unique, so rice is the main ingredient. In the masterclass you will discover different Italian dishes with different touches and, if possible, something you have never tried before, ”said Chef Matteo. The celebration of Italian flavors continued at the lunch table, where we celebrated zesty flavors with lemon as the star ingredient. The first course is Involtini di Melanzane, eggplant rolls with burrata cream, basil pesto sponge and Tajasca olives.Following this Tortelli di ricotta, featured tender ravioli stuffed with ricotta cheese and served with tomato salad consommé and lemon zest. The vegetarians then moved on. Cavolfiore ArrostoCauliflower Steak with Green Peppers in Lemon Butter Sauce and Non-Vegetarian Flavors Agnello Croccante, breaded lamb cutlets with green pepper and oregano juice.The meal ended on a sweet note. cannoli siciliani, It features Sicilian cannoli stuffed with ricotta, candied orange, and chocolate chips.

The taste of Italy wasn’t just in the food, there were also cocktails and mocktails on offer. The offerings included a whiskey-based Lynchburg lemonade with Cointreau, lime juice, sugar syrup, and soda. Amaretto-based Amaretto Sour with Angostura bitters, egg whites, lime juice, and sugar syrup. Elderflower Spritz with elderflower syrup, orange juice, lime juice, mint leaves, and soda. The Ledge features peach, cucumber, lime juice and sparkling water.
The masterclass ended with guests tasting the flavors of Italy in the capital and reminiscing about the upcoming brunch.
