SAN DIEGO — A local restaurateur behind the popular Sicilian-inspired restaurant Rusticucina in Hillcrest is paying homage to the city of Rome in San Diego’s Little Italy.
The new establishment, called Roman Wolves, is more than just a bar and restaurant, according to founder Nino Cusimano.
“We have created a unique interpretation of Roman heritage and the important historical, cultural and culinary influence it has had on Italy’s food and nightlife scene,” he says, elaborating on the cocktail-forward concept. he said.
The native Sicilian has spent months reimagining the 4,000-square-foot space at the corner of Farr and Ketner in the Broadstone Building, with a grand opening date scheduled for February.
“The interior design has been designed to evoke the charm and romance of the city’s historic streets, creating an atmosphere that sets us apart from other eateries in the neighborhood,” the restaurateur explained.
There will be a lively bar and lounge area, and Cusimano says there will also be a carefully selected cocktail list to complement the flavors of the restaurant’s food. Includes Italian aperitifs, premium his spirits, homemade mixers, and signature spritz collection.
Roman-inspired plates are served under the direction of Chef Enrico De Santis. For dinner, choose from classics such as carbonara, amatriciana, cacio e pepe, pollo saltimbocca, and pinsa alla mortazza (Roman folded pizza).
Cusimano and Chef De Santis are also committed to using locally sourced ingredients. They say this will help “ensure that the time-honored regional cuisine captures the essence of Rome’s culinary traditions.”
Roman Wolves, located at 1980 Kettner Blvd., is open Monday through Thursday from 4 p.m. to 10 p.m., Friday from 4 p.m. to midnight, Saturday from 3 p.m. to midnight, and Sunday from 3 p.m. We will be open until 10 o’clock.
