WILKES-BARRE — A popular food truck known for its authentic Belgian waffles will soon be setting up shop in Diamond City.
All Belgium, a food truck specializing in Liege waffles with endless combinations of Nutella, fruit, bacon bits, ice cream, and more, is opening a brick-and-mortar location at 10 W Northampton St.
In 2021, Wilkes University students Thun de Schepper and Billy Berry started a food truck after De Schepper, who was born and raised in Belgium, struggled to find food that tasted like home. I came up with the idea of raising it.
“As I continued to meet new people, their first impression of Belgium was that the waffles, beer, and fries in my home country were very good. I couldn’t find anything like that in America. So I thought why not bring it here,” De Schepper said.
So De Schepper and Berry began selling waffles infused with pearl sugar, a Belgian specialty made from batter rather than pastry that melts and caramelizes when cooked. This gives them a unique flavor that is very different from typical breakfast waffles. .
Business quickly took off. In 2022, All Belgium begins operating his second food truck in Chicago. According to De Schepper, expansion has always been part of the business plan.
“It’s always been a goal to expand. We started a food truck to see what that would look like, but we always wanted to have as many multiple locations as possible. Our “The long-term goal is to be in all kinds of venues, like zoos, ski resorts, arenas, etc.,” he said.
On January 6th, All Belgium will open its first store, bringing it one location closer to its goal. De Schepper says this will allow for an expanded menu.
While the in-store menu will still feature the waffle that started it all, All Belgium will be expanding its topping options and adding different types of waffles. Additionally, you can cover your waffles with chocolate and infuse them with fruit, cereal, or chocolate.
Even better, All Belgium is branching out to offer an authentic Belgian coffee and ice cream menu.
For now, the storefront will operate as a walk-up service, but De Schepper said there are plans to add a seating area in the near future.
As for the food truck, All Belgium plans to continue operating at events, but curbside purchases will no longer be available.
